Reserve the remaining cordial to use in breakfast cocktails, puddings, or to make another batch of this cocktail.

Bikini Recipe

Yields 10 servings

Ingredients for the Clementine Cordial (produces 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar

To make the Cocktail (makes 850ml, enough for 10)

400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml clementine syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing

Instructions

Making the Syrup: Place the listed ingredients inside a pan, heat until it reaches a gentle boil, agitating so the sugar melts. Next, turn off the stove and leave to reach room temperature entirely. Decant into an sterilised bottle, cap it and store in the fridge, where it will keep for about a month.

To make Cocktail Base: Mix every spirits and syrup into one big jug, allow it to infuse for 60 minutes, then filter it , ideally through a fine cloth, making it fully clarified.

For serving: Add 85ml of your cocktail base into your cocktail shaker packed with ice, gently stirring gently for a minute until cold. Filter to a cold coupe glass or similar, garnish with some cranberries adding the final touch using a brief mist of mandarin oil above the glass.
